It is made with the best cuts of premium horse thighs. The salting process is carried out using a mix of salt, spices and flavourings, then the dough is bagged into gut and cured. It has a sweet, slightly intense flavour. Horse Bresaola is rich in iron, easy to digest and suitable for a varied diet.
